whats wrong with the brakes?

The problem is: No matter what i do to the damn things, there always seems to be air in the system or at least a lack of pressure. Not when the engine is off, but only when the engine is running. The brakes seem fine without the engine tunring ocver, but once that occurs, all pressure is lost

Looking in your photos, i can't see you have your servo vacume hose connected to the engine. That will be your problem, or if you do you have a major leak some where. It won't be a leak in the brake lines if there is a pedal when its not running.

The servo hose comes off the inlet, to the vac pump amp valve junction, then to the servo itself

I had very similar symptoms as you when my brake bias valve was seized because it was preventing me bleeding the rear brakes properly

I presume it'd look not too dissimilar to the 306 version?

You don;t need to have the vacume connected to the engine at all,
I never run this on anything, Even my 306 I've blanked it off,
If the vacume pump is good enough for a Derv then it's much better than the inlet manifold and having measured it, they provide a huge amount ideal for left foot braking without running out of assistance
